Fresh Milk: 1 litre (preferably full cream cow’s milk)
Time & Patience: 1–1.5 hours of slow simmering
Pour the milk into a thick-bottomed pan and bring it to a gentle boil.
Keep stirring often on low flame as it reduces slowly.
As the milk thickens and leaves the sides, it transforms into rich, grainy Khova.
Once reduced to 1/5th of the original quantity, turn off the heat.
Let it cool and store in a clean container. Consume within 2–3 days when fresh, or refrigerate up to a week.
